In Cod We Trust – in Barcelona

In a city centre back street in Barcelona, somewhere near Las Ramblas, we found this shop. It sells one thing only: blocks of dried salt cod: bacallà (Catalan) bacalau (Spanish). Salting and drying cod changes and deepens the flavour, and means it will keep for a very long time if necessary. Soak it to remove much of the salt and to soften it, and use in your favourite recipe!

I’ve never developed the technique of cooking it, and I hate the smell but I do have a couple of favourite dishes- bacalhau, as we spell it here, is widely available in our supermarkets. Bacalhau com natas, in a creamy, sometimes mustard flavoured sauce, I like very much. Or bacalhau a bras is like scrambled eggs with codfish flakes and slivers of potato. Very tasty.

  2. We have a shop here in Melbourne that sells salt cod among other delights. I thought I’d give it a go…not sure if I soaked it too much or not enough, but it didn’t work out too well. I’d like to try it when prepared by someone who knows what they are doing.
